Welcome to issue #21 of SIN. The cicadas are out and the people are in. Lately, it’s starting to feel like the sake industry is slowly finding its rhythm in the COVID-19 age. The online tastings and virtual tours are becoming more and more frequent and better organized. Small, capacity-limited tasting events in bars and restaurants are slowly starting to pop up around town. Many restaurants and bars are also finding their feet and adapting well to restricted seating policies, stringent hygiene standards and new seating systems. In what is almost becoming our catch cry in this day and age, "we'll see how things go from here..."
As always though, for now grab some sake (a summery-natsuzake perhaps?) and settle in for the latest news from the Japanese sake industry.
