Welcome to Issue #32 of SIN.
We hope you all enjoyed your New Year celebrations and have begun settling into 2021. For the sake industry, January is the turning point for many breweries that begin to focus their attention on their ginjō and more specifically daiginjō brews as the weather cools down and the snow starts to build up. Despite the obvious difficulties, there is a lot of great sake appearing everyday as the new sake for the season continues to roll out. The downside is many of us in the major cities of Japan are back under lockdown and not as free as we'd like to be to get out and sample all the sake on offer. Still, things could be worse, so lets put our smiley faces on and be happy with what we've got.
